Joshua Leise – At Home in the Mondschein – Two winters ago, Joshua Leise cooked at the Mondschein for the first time – during a special event designed to bring fresh life into our old dining room with the help of young culinary talents. A classic menu, perfectly in line with Joshua’s style: clear, refined, and personal.
Our resident DJ Audiomed provided the soundtrack in Mondschein’s historic dining room – trip-hop, a laid-back, jazz-influenced electronic sound with deep bass lines and a cinematic feel.
The evening was a full success. Afterwards, we sat down together, enjoyed a glass of wine – and instantly felt: this was a fit. Joshua was looking to go independent, and we were looking for exactly that kind of person. Two weeks later, we met again at Hotel Mondschein – and the path ahead was clear.
Since December 2024, Joshua Leise has been in charge of the entire Food & Beverage division at Mondschein. He pours his heart into three distinct concepts: the historic dining room, the panorama restaurant, and his Chef’s Table. Together, we founded Leise im Mondschein GmbH – Joshua is head chef, managing director, and the creative mind behind all things food and drink.
Awarded five Michelin stars, a Green Michelin Star, the Young Chef Award, and named a “Young Talent” by Gault&Millau.
In the Falstaff Restaurant Guide 2025, Joshua Leise is recognized for his traditional alpine cuisine.
The magazine A la Carte highlights his creative take on alpine cooking, reinterpreting classic dishes in fresh, unexpected ways. For example, he serves baked oysters on braised bacon cabbage with beurre blanc, or sturgeon fish dumplings with paprika sauce.
By the way, Mondschein is also home to one of the best Kaiserschmarren in the mountains.
